Why is our cheddar cheese so special?

As we said before, the ingredients!  Nothing can compare to farmhouse cheddar cheese made from milk obtained from cows grazing on  succulent green pasture! Our cows are only in the milking parlor long enough to be milked.  All their time is spent grazing on green pasture!

Cheddar cheese is a celebrated food in America today.  Not only for holidays and gifts, but cheddar cheese has been adopted by many as a staple food to satisfy a requirement for the milk group.  Farmhouse cheddar cheese made from milk derived from cows eating green pasture all day would definitely be a great choice!

We work with nature in making our aged farmstead cheddar cheese, not against it.  We start with our cows by not forcing them to give us maximum milk production.  They are free to walk around all day and night in pastures.  Low stress is needed for healthy cows!  We bring them to the milking parlor only long enough to be milked.  Afterward they are immediately set free on pasture again! 

We work with nature in making our aged farmhouse cheddar cheese, not against it.  The milk we obtain from the cows is not altered or changed by extreme heat, extenders or additives.  Naturally occurring enzymes and vitamins in the milk are not destroyed by heat.  The gentle heating process of temperatures no higher than 101-102 degrees F. insures that the cheese making cultures are not killed but remain alive and viable. Their presence in the cheese allows the cheese to age properly.  And, combined with the type of milk used, contributes to the flavors of the aged cheese.  Hence, the presence of healthy viable cultures combined with grazing habits of the animal in spring, summer, or fall pastures will create the unique flavors of authentic pasture fed aged farmstead cheddar cheese!

Our farmhouse cheddar cheese is not made during seasons where there isn't any pasture!  We make the cheese during seasons where we have pasture and store it in an aging room until it is ready for you!  From our farm to your table!
