Farmstead Cheese Recipes
Beans and Cheese: This simple recipe for cheesy beans is satisfying and delicious.
About one 12 oz. can of Great Northern Beans. 1/2 cup of shredded farmstead cheddar cheese. One cup cottage cheese. Garlic, pepper or chives are optional.
Heat Great Northern Beans hot enough to melt the cheese. Sprinkle shredded cheddar cheese on top of the beans after heating. Serve with cottage cheese on the side. Garlic, pepper or chives can be sprinkled on top of the cheese before serving. Crackers or toasted bread are also very good with this dish.
Hot Farmstead Potato Salad: This recipe uses 5 lbs. pealed and boiled potatoes, 2 lbs. bacon, one large onion, three cups milk, 3/4 cup flour, 4 to 6 cups of shredded Colonial Classics Farmstead Cheddar Cheese and broccoli (optional)
Boil potatoes, drain and place into baking dish; dice one onion and add to potatoes
Fry 2 lbs. bacon on the crispy side and break it into pieces then add to potatoes then set aside this mixture
Next, add 3/4 cup flour to about 1/4 cup cold milk and stir until dissolved; add the dissolved flour mixture to three cups of milk and heat to boiling; reduce temp. to medium heat and stir constantly until thickened. Add cheddar cheese and stir until melted; add salt and pepper to taste. Pour over the potato mixture and add cooked broccoli if desired.
Place covered in oven on warm until ready to serve.
