 We do not milk cows or produce cheese during months when there isn't any pasture!  The cows harvest green pasture and we make their milk into gourmet cheddar cheese that is stored in an aging room until it is ready for you to enjoy!  Along with fresh, grassfed, raw, whole milk, very careful observation, time and patience goes into every making of our farmstead cheddar cheese. Our gourmet artisanal handmade cheddar cheese is made from milk of pasturefed cows rich in vitamins, minerals and natural enzymes. Our all natural raw milk cheddar cheese is aged a minimum of 60 days, which is equal to the effects of pasteurization without killing off heat-sensitive healthy enzymes or destroying the natural vitamins and minerals. Our goal is to create a delicious, wholesome, all natural ,mild or sharp, quality farmstead cheddar cheese with no artificial ingredients that can be served by itself or enhance any recipe!

     Starting with cultured, whole, raw milk from our grass-fed cows, we then stir the rich, whole milk while applying gentle temperatures so as to not kill the healthy enzymes.  Careful observation and quality control is maintained throughout the complete process.  Salt is added before it goes into the press.  After the cheese has been properly pressed, it is vacuum-packed  and placed in an aging room until it is ready for you to enjoy!
