     We are a family owned and operated farm!  Our cheese-maker, Kebria Dye, has a B.S. Degree in Biology and Chemistry.  Cheddar cheese is our specialty.   In order to make gourmet, artisanal, cultured raw milk, farmstead cheese, our cheese is made with care and consideration every time.  We are committed to create a quality grass-fed, handmade all natural aged farmstead cheddar cheese and this is why the ingredients are  of primary concern.   Milk that is obtained from cows that live in a truly natural environment where  they eat pasture has a natural yellow color.  Cheese lacking this color also lacks the constituents of pasture.  Grass-fed animals are healthier and more contented.  And, while they do not give high production or consume substances that induce high production they live longer.  Slow food does not start with the production of the cheese.....it starts with the production of the milk!  Grass-fed, pasture-fed, slow food production ....... returning to a simple, uncomplicated way of life......easygoing for the cows...easygoing for our health....captures the ingredients for a product that is unequaled in today's world of  fast paced, high tech, mass produced imitations.

     The unique qualities and flavors of farmstead cheese relies completely upon the individual cows in the herd and their cumulative efforts as a whole. 

     As our cows are free to graze (not a few hours per day) but 24 hours a day on our 252 acre farm. Each one is harvesting pasture in a different place in the field.  Milking time brings all their efforts together.  All the milk  cows produce goes into our farmstead cheddar cheese!  Half-n-Half, Duchess, Kiwi Fuzz, and Comet, to name four, gave us their best in order that we can make the very best gourmet old fashioned cheddar cheese possible for you!

     Fresh air, sunshine, and green pasture is a natural environment.  All natural is best!  Giving our cows the best enable them to give us their best!  And that's it!
